Sweet Potato Fries

Sweet potatoes are good and good for you! I love to use them in many ways but here is one of my daughters favorite ways to enjoy them! You will need…
1 large Sweet Potato
about 2 tbls Olive oil
Salt and pepper to taste
I first set my oven to 425. Then I peel the sweet potato. Cut into your favorite fry shape ( like steak cut). Spread onto cookie sheet, drizzle with olive oil and sprinkle with salt and pepper. Bake for about 20 min or until golden brown. You need to flip them half way into cooking time. Load up on a plate and serve.

Sweet potato fries have to be one of my favorite foods! I’ve also made them by putting 1/2 c. coconut oil, some sea salt, cinnamon and paprika in a bag with the potatoes and shaking to coat. Good stuff!
