Fennel Salad

A friend of mine invited my daughter and I over to her house for a beautiful Spring BBQ. Because we are vegan and her family is not I, of course, brought some fresh veg and a couple of rice patties to grill.  I had just bought a beautiful organic fennel and decided to bring it along and figure out what to do with it once I was there. So I brought along just a bunch of veg I had in the fridge. When I got there her and I began chopping and preparing everything (honestly she did more than me, my rice patties were already done and cutting fennel in quarters isn’t much work). I just love making things up on the fly and using whatever is around not relying just on what I have in my cupboards. I thought a nice salad sounded nice so here’s what I came up with…

Vinegrette

First get out a large bowl. Chop tomato and cucumber place into bowl. I cut the fennel into quarters and grilled two parts or half and chopped the other half and added to the salad. Once the fennel is grilled to your liking chop it as well and add to salad.

For the vinaigrette

I didn’t have my jar with the lid so I just used a sippy cup of hers poured all the ingredients in put my finger over the holes and shook. I then poured about 1 to 2 tablespoons over the salad and served.

Her and I both thought it turned out really yummy! I hope you’ll try it and let me know what you think!
